Carrot loaf and cupcakes

I'm not the baking type because I find it almost impossible to follow instructions and be exact with my measurements and you need both those skills to bake anything really so I never bother, but today I really fancied carrot cake so somehow I managed to make them, bake them and eat a couple with no measuring and do you know what they are bloody good! Although I have tried to bake before without measuring and it was a disaster so it was very lucky they worked and I would definarly reccomend you did measure things! I made a yummy orange and cream cheese icing to go on top and have eaten three cupackes in about half an hour so well done me.

Rare Roast Beef and sweet chilli stir-fry

I always make a Roast dinner on a Sunday without fail and I know for a fact that it is the dish I do best with sticky goose fat potatoes and home-made Yorkshire pudding no matter what the meat is and this Sunday was no exception, I made roast beef with all the trimmings and ended up with Lot's of left over beef as it was large joint and there was only two of us. So today for lunch I raided the cupboard and fridge and made a stir-fry using Thai stick noodles, cabbage, broccoli, fish sauce, soy sauce and sweet chilli sauce, then at the very last moment I added thin slices of my lovely pink beef and all was well in the world.

Valen-Thai Feast

Did you like what I did with the title there, Valen-Thai like valentine but with Thai put in it because that's what I cooked for me and Mercer for our Valentines dinner.....No, fine.
Me and Mercer arn't exactly rolling in money at the moment so I said I would cook a romantic meal for us instead of going out, so that's what I did and Thai food is what I cooked. I made some classic Phad Thai minus the prawns as fussy pants won't eat them and i also made a Panang curry and served it all with coconut rice, prawn dumplings(for me) and some little spring rolls.
To get supplies I went to my favourite oriental food market called 'Yum Yum' that I did a post on awhile back and got supplies. I'm afraid I did buy the panang curry paste, the phad Thai sauce, the dumplings and spring rolls ready made so there!

My little prawn dumplings frying away! I steamed them first then I like to fry them to make them all crispy on the outside and they are lovely.

Crusty topped cheesey potato pie

This may be one of the most calorific things you could possibly eat, but when it's lashing down freezing cold rain with 100mph gusts of wind and you want to cry a tiny bit then I recommend you eat this cheesey, gooey crusty topped pie and laugh in the weathers face...'F***K you weather, I'm eating loads of cheese in a pie and I just don't care!!!!'
I made the usual mashed potato with milk, butter and lots of pepper then I added a dangerous amount of home-made 4 cheese sauce that I had in my freezer, then I grated some very Strong Cheddar and put that in and to finish it off I put even more Cheddar on the top and some Parmesan to give it a crusty crust.
This would be great with so many things but I had mine with pork fillet, brussle sprouts and apple sauce..Fanbloodytsatic I tells ya!!

Creamy Spinach Fettucini

I am not going to claim this pasta dish as some kind of culinary masterpiece but it is delicious and oh so easy peasy to make. I needed something quick before going to work in the evening and so threw togther some baby leaf spinach, cream, parmasan and freashly ground mixed peppercorns into some fettucini, voila!
