Even though it's the start of spring it's still bloody cold and wearing big jumpers and eating soup are high on my list of prioritys!! I went out last night and so am feeling a bit sorry for myself today and definatly did not want to go to the shops for supplies so I just raided the veg drawer to make this yummy soup.
I roasted carrot's and parsnips in the oven for half an hour before adding them to the pan I was sauteing swede, potato and onion in. I added some home-made chicken stock and seasoning and when the veg was tender I blitzed the lot.

I put a big spoonful of sour cream on the top and a huge amount of pepper and it was good....Another picture on my windowsill, I don't know why

ReplyDeleteSoups thrown together from fridge bits usually turn out tasting lovely. Only problem then is trying to recreate it if it tastes gorgeous.
ReplyDeleteSoup is my 'go to' food when I'm feeling happy, melancholy, or just plain irritable. Soup made from whatever is in the fridge, is THE BEST soup ever, every time.

@Karen..It's very hard to recreate a soup when it's just bit's and bob's from the fridge but home-made soup always has that same kind taste to me!!!
@Michael....I had a lovely Sunday thank you and sour cream is great, perhaps not on this veg soup again but I love putting it on pea and spinach soup,yum.
@Rach...Homemade stock is so easy, just boil your chicken carcass from a Sunday roast with lot's of veg and a bouquet garni for a few hours and you’ll have a fantastic stock!!!!
